Banaan pannekoekjes
Banaan-ei pannekoekjes zijn momenteel helemaal hip in health food land. Het is makkelijk en (bijna) iedereen vindt het lekker. Vooral als eiwitbron na het sporten wordt het veel gegeten. Maar wat doe je als je e wilt maken zonder ei???? Nou dan stop je er wat eiwitpoeder in voor de eiwitten en bind je het toch met een beetje bloem… Niet net zo makkelijk, maar wel net zo lekker. O ja en ik heb er wat bosbessen bij gedaan, gewoon voor nog meer vitamines en omdat dat lekker is.
Banaan pannenkoekjes
- 40 gram havermeel (of fijngemalen havermout)
- 40 gram volkoren rijsttmeel
- 1/2 theelepel bakpoeder
- 2 schepjes proteïne poeder (optioneel)
- 250 ml ongezoete amandelmelk
- 1 el chiazaad + 3 el water
- 1 el ahornsiroop
- 1 rijpe banaan
- 1 tl koekkruiden
- handje bosbessen
- snufje zout
- kokosolie om in te bakken
- meng in een kom de melen, bakpoeder, zout, koekkruiden en proteïnepoeder door elkaar.
- prak de banaan tot moes en meng met de ahornsiroop, chiazaad en water en de amandelmelk tot een glad mengsel.
- schep met een spatel het droge en het natte mengsel door elkaar.
- Verwarm een klein pannetje op vuur met een beetje kokosolie en schep er 2 -3 eetlepels beslag in. Als de onderkant al wat droger is, gooi je een paar bosbessen in het beslag en draai je het pannenkoekje om. Bak m in 1-2 minuten gaar.
- ga zo door met de rest van het beslag.
